Bang Bang Shrimp the Healthy Way (Wednesday, June 6th, 2018)

I haven't posted in awhile because we have just been doing the same stuff over and over.  Boating, golfing and pool time are all fun, but they get monotonous in a blog post.  

We did have a slight tragedy a week ago when our friend Sharyn fell and broke her hip, but after having three pins put in, she is a stud and is recovering with flying colors.  

But tonight we did something a little different that I thought was worth sharing.  Using a recipe from the internet, we made our own homemade version of Bang Bang shrimp, and it was truly a hit.



For anyone that has followed my blog in the past, you know that I am a bit of a health food junkie, and you also know that I love Bone Fish Grill.  So we combined those two passions and created a truly amazing meal.

The sauce consisted of 
8 Tbsp greek yogurt,
6 Tbsp sweet chili sauce,
2 tsp sriracha, 
Mix this up and let it sit for a few hours.

We used 1 1/2 pounds of shelled, deveined shrimp. Toss the shrimp with a 2 Tbsp olive oil and 1 Tbsp minced garlic.  Grill on low, or cook at 375 on the Traeger for about 10 minutes.

When the shrimp were done, we tossed them with most of the sauce, and two diced scallions (thinly sliced diagonally).

We served them on a bed of thinly slice spinach, garnished with sliced cucumber and shredded carrots.  



Instead of eating our Bang Bang shrimp as an appetizer, we chose to have it as our main course.  Using freshly grilled shrimp instead of breaded, fried shrimp brought out all of the great fresh shrimp flavor, accompanied by the yummy bang band sauce, it was an amazing dinner!
