Fort Collins, Thai and Indian (Saturday, April 8th and 9th, 2017)

As soon as we got to Fort Collins, we checked into our room. Since we are platinum members with IHG Hotels, we get the best room available when we check in.  So of course, with our daughter staying with us, we wanted a nice spacious room!

We were trying to make this weekend feel like a little mini-vacation for her since she doesn't get away from school very much. 



It didn't take her long to settle in and get comfortable.  She was doing research to see where we should eat dinner.



The room at the Candlewood Suites was very nice with two queen beds, a lounge area and a kitchenette.  




Our daughter decided on a Thai restaurant in Loveland, CO for dinner.  It was called Bai Tong, and was in an old house.  It had a fun atmosphere.



We started out with an order of crispy tofu, which was deep fried tofu with peanut sauce.  The tofu was pretty average, but the peanut sauce was to die for!

Then for dinner we ordered some tom ka, which is coconut milk soup with chicken. Sweet basil, which is a stir fried dish with Thai basil, and panang curry, a red curry with vegetables and chicken.  

They were all really good.  This is the first really good Thai restaurant we have found in northern Colorado. 


Our daughter loves Thai food, so she almost crawled into the bowl.


After dinner we stopped at McDonalds for some hot fudge sundaes, which we took back to the hotel for our daughter's birthday celebration.  A great gluten free desert option for our gluten free girl.



We are having so much fun just spending time with this girl!

There were four pillows on each of the queen beds, so Steve and I each selected the pillows we wanted, and our daughter took the rest.  She was in heaven.  This is her kind of mini-vacation!


The next day, our daughter's boyfriend got some time off work, so we brought him along to lunch.  They both wanted Indian food, and we haven't had any in a long time, so we were very excited.  Such a good choice : ).


It was just a little restaurant in a strip mall, but it was bright and cheery and very clean. 



With Indian food we always order family style and share all of the dishes.  We had chicken tikka masala ( chicken in a tomato cream sauce, mutton masala (goat in an Indian gravy), bhindi masala (okra in a tomato sauce) and saag paneer ( spinach and cheese).  So good and so healthy, and reasonable priced as well.  We are so excited to find this restaurant.  

After lunch we spent a little time at our daughter's apartment, then it was time to head back to Denver.  

We feel so blessed to have this time in Fort Collins with our daughter!  She is doing so well creating her life here and really embracing it.  We're sure she misses us as much as we miss her, but but it hasn't slowed her down a bit.  She is such a strong person and is thriving without us!

We decided to go to one of our favorite Mexican restaurants for lunch with Steve's parents on the way to the airport, and called Steve's brother and his wife to see if they wanted to join us.  It was really nice to see everyone, one last time before we left to return to Arizona.  



Our trip home to Colorado was fabulous!  Although I love Lake Havasu and the incredible weather, it's hard to not have family close by.  We definitely have to plan it when we want to see our kids and his family, and I miss them a lot! 

So now we head back to Arizona with great memories of the week we had with our oldest daughter and her husband, our quick trip to Mesa, and the time we spent with everyone in Colorado.  Hopefully that will tide us over for awhile.
